We are trying to get back in the groove at the House of Hills after a week on vacation and before that a week when My Sweetie’s back was out and the week before that we had just moved in and the week before that we were moving and the week before that we were packing. Ya, it’s been a little insane here at the House of Hills. However, it appears that our calendar is calming down so that’s good.

Monday: Small Group – Out for dinner

Tuesday: Blue Cheese Burgers

Wednesday: Grilled Chicken and Salad

Thursday: Leftovers (event at church so may be out)

Friday: Leftovers

Saturday: Garlic Shrimp

Sunday: Tacos

Menu Plan Monday 09 06 10

Okay people! We are settled in our new home. We are getting back on a schedule. And, it’s time to get back to menu planning. Last week was a week of pizza and take-out. Yuck! We need to get back to it for both our wallets and our health!

Monday: Out for Slopes BBQ – thanks to a Groupon purchased a couple weeks ago

Tuesday: Garlic Shrimp

Wednesday: Grilled Chicken and Salad

Thursday: Happy 40th to My Sweetie – out for dinner

Friday: Leftovers

Saturday: My BFF Katie’s benefit Kickin’ It For Katie is this day. So, we’ll be there. If you are in the northern ATL, you should make plans to attend.

Sunday: Company Picnic

So, looking at the week, I’m not really cooking much, but I’ve got a plan!

Menu Plan Monday: July 26, 2010

Life is about to get CRAZY in the House of Hills. We got a contract on the house. Should get the inspection report today. Need to get those items fixed. Need to get the Princess registered in a new county as school starts SOON! And, a MILLION other things. So, I seriously need a meal plan this week to have at least one stable thing.

Here’s the plan.

MONDAY: Small Group. I’m not cooking. PTL

TUESDAY: Breakfast for dinner – easy and plan on making some extra waffle sticks for a friend’s family

WEDNESDAY: Leftovers. My Sweetie did some batch grilling on Sunday. We have some left.

THURSDAY: Garlic Shrimp

FRIDAY: Take Out

SATURDAY: Stir Fry

SUNDAY: Tacos

Oh, and did I mention that I went on a huge meat run not long ago. Now, all that is in my freezer. MUST eat lots from the freezer before closing date. I seriously don’t want to move all that meat across town in this Georgia heat!

Bulk Buying Meat

We were almost out of meat at the House of Hills. Being out of meat would be a TRAGEDY! I am pretty much never out of meat. I always have some in the freezer. ALWAYS! That is because I bulk buy my meat.

There are several places to bulk buy meat. I purchase a good bit of my meat at BJs – our local warehouse store. Some people arrange with farmers and buy half a cow. Once I have an outside stand up freezer, I am SO doing that. I also watch for meat on sale at the local grocery and stock up when it’s a really great deal. The goal for me is to always have my freezer full of protiens so that I’m not having to run out to buy a particular meat WHEN IT IS NOT ON SALE in order to feed my family. I HATE paying full price for meat.

Today I bought:
Package of chicken breasts – at BJs- it’s already pre-portioned into 2 breast packages
Package of chicken thighs – at BJs – it’s already pre-portioned into 3-4 thigh packages
Ground Beef – at BJs – 4lbs
Bratwurst – at BJs- 12 in a package
Lil’ Smokies (beef) – at BJs – 2 pack
Mild Italian Sausage – at Publix – on sale – 5 in package
Hot Italian Sausage – at Publix – Manager’s Special – 5 in a package – bought 2

I got home with all this meat and had to do something with it. You can’t just stick those big packages of meat in the freezer. They have to be broken up in to usable portions. It takes a little bit of time on this end, but when it comes to meal prep, it makes it SO MUCH EASIER.

I took 1 pound of ground beef, 2 mild sausages (out of casing) and 1 hot sausage (out of casing) and put them in the frying pan to cook real quick. Once that mixture was done and drained, I froze half with the label, “meat for spaghetti sauce” and put the other half in the crock pot. I added a jar of spaghetti sauce I’d picked up BOGO, a can of petite diced tomatoes from the pantry, some seasonings, and some mushrooms. That’s cooking nicely for dinner tonight. We haven’t had spaghetti in forever!

I took 2 pounds of ground beef and mixed up some blue cheese burgers, made the patties, and put them in a Tupperware container. My Sweetie will grill those tomorrow night for dinner. We’ve found that the patties stay together better if they’ve had time to rest as patties.

I broke down the chicken and put the majority of the pre-portioned packages in the freezer to be used another time. I did save four chicken breasts to grill tomorrow night with the burgers. I went ahead and mixed up my favorite marinade, added the chicken and put it in the fridge next to the burgers. Sometimes when I bulk buy chicken, I’ll use one of my favorite freezer cooking tips and cook some in the crock pot to be used in casseroles.

I put the last pound of ground beef in a freezer bag. I put the rest of the italian sausage in freezer bags (3 per bag). I broke down the bratwurst package and put 4 brats per freezer bag. Then, I put all that in the freezer.

My freezer now has PLENTY of meat in it. Whoop! When I sit down to menu plan for the next few weeks, it will be easy. I’ll just check the freezer to see what I have and decide what to cook from there. No shopping each week for full-priced meats.

Meal Plan Monday: 06 28 10

We are recovering from a weekend of Family Reunioning (is that even a word). So, we’ll be having a plethora of leftovers. In addition, the Princess is at a day camp that is about a 50 minute drive from our house (that’s not really that far in Atl terms – really).  So, I’m walking in the door about five minutes before My Sweetie, which means, we are not having big meals.

Monday: Leftover chicken BBQ

Tuesday: Daddy out  so we’ll eat whatever we find in the fridge

Wednesday: Leftover Italian Drip Beef

Thursday: Mommy out so Daddy will warm up whatever is in the fridge

Friday: We’ll all be together at the Princess’s end of camp assembly. And, traffic will be crazy since it’s Friday. So, I see us stopping for dinner on the way home.

Saturday: Hot dogs on the grill

Sunday: Fourth of July. Not sure what the plan is yet, but pretty sure it will involve a potluck.

So, that’s the plan for the House of Hills. You’re probably wondering why I even wrote it down. Here’s the thing. When I don’t menu plan, I hit 5pm and have a slight panic attack. I don’t like that – at all! So, I took some time to type this out. It also proves that I don’t cook every week. Especially when we’re busy and it’s hot!

Menu Plan Monday: 05 31 10

It’s Memorial Day – A day to thank those who have given the ultimate sacrifice for our country. This is not something I take lightly. I am so thankful to live my humble little life in American suburbia. To those who have fought and those that continue to serve, I say a very heartfelt, “THANK YOU!”

We’ve got a busy week here at the House of Hills. Here’s the menu plan.

Monday: Pasta with Eggplant and Mini-Meatballs – I picked up an eggplant at the Farmer’s Market on Saturday, and have been searching around for a way to serve it. Since it is currently pouring down rain, it can’t be grilled. Since it’s May in the South, I don’t want to turn on the oven. This one looks delish and doesn’t require either of those!

Tuesday: Leftovers – we’ve got a fridge full!

Wednesday: I’m having my Baked Bean Showdown! The hubby and friend are going to grill some hot dogs. I got a watermelon and some chips. My mom is bringing some Mac&Cheese and a salad. Another friend is bringing a potato salad. It will be a fun time. If you’re in town, come on over.

Thursday: Quesadillas

Friday: Homemade Pizza using Crystal’s Crust

Saturday: Take-Out of some kind. The Princess is heading out of town for a week so it will just be My Sweetie and I! Whoop!

Sunday: Leftovers for dinner. Buffalo Chicken Dip (I couldn’t find a link for the exact recipe I use. I’ll post it after Sunday.) for Book Club.

Menu Plan Monday: 05 24 10

It’s the LAST week of school here at the HOUSE OF HILLS! That means… well, chaos basically. Here is our tentative meal plan. I say tentative because of the aforementioned chaos.

Monday: Leftovers and then the Princess has an Accelerated Reader reception because she rocks at reading.

Tuesday: Cheeseburger Pie, salad, celery sticks (This is field day. I will be tired. This recipe is EASY.)

Wednesday: Garlic Shrimp, Rice, Steamed Veggies

Thursday: Leftovers (This is end of the year party. Nobody will be very hungry I have a feeling.)

Friday: Pizza at the Pool (LAST DAY OF SCHOOL! Wahooooo!)

Saturday: Chicken on the grill (Will post marinade recipe I’m currently loving later in the week.)

Sunday: Chicken (leftover from Sat) on salads or in tortillas
