Well, I’m home from my conference, and the hubby is off to his. It’s another crazy week at the House of Hills. Since it’s girls’ nights through Wednesday, our menu is a little loose.

Monday: Homemade pizza using Crystal’s amazing crust

Tuesday: Tacos

Wednesday: Leftovers

Thursday: Pork Loin (hubby’s home!), salad

Friday: Taking the Day Off – out to eat

Saturday: Chicken of some kind

SO, I’m off to the ORANGE CONFERENCE this week.

That means I won’t be home to cook. The Princess will be at her grandma’s, but my Sweetie still needs to eat. So, I’ve stashed some leftovers in the fridge.

He can choose from:

Shrimp Stir Fry

Buffalo Shrimp

Porkchops

or Pancakes.

I am also treating my co-workers (many of whom came from out of town) to some yummy treats today. I had a great morning of baking on Saturday and cooked it up!

Menu Plan Monday: 04.05.10

It’s SPRING BREAK!! Wahoo…. Of course, I’m still working – at least the beginning of the week. The Princess is hanging out at Grandma’s house with cousins for the beginning of the week and then my father-in-law and step-mother-in-law are coming into town for the end of the week. And, that side’s cousins are coming over too. So, it’s a cousin filled week for the Princess!

Monday – Leftovers (It’s just hubby and I so we’ll clean out some of the excess in the fridge.)

Tuesday – Roasted Chicken, salad

Wednesday – Steaks, steamed veggies, rolls

Thursday – Out to dinner with Family

Friday – Grill Out (hot dogs, hamburgers, chicken breasts), veggie tray, fruit tray, chips, pickles

Saturday – Leftovers

Sunday – Homemade Pizzas

I’m typing this on Sunday. The Princess is sick. I think it’ strep. My throat is starting to tingle. Hmmmm… May not be cooking as much as I’m about to plan. Pray that I am.

Monday: Small Group – well, small group just got cancelled so I’m thinking leftovers.

Tuesday: Marinated Pork Loin (from freezer), salad, rolls

Wednesday: Chicken Ranch Pizza (from freezer) I was going to make this last week and didn’t. Looking forward to it.

Menu Plan Monday: 03.15.10

Made the Ziti last week for small group. They LOVED LOVED LOVED it. A GREAT recipe for a crowd and for in the freezer.

Another discover last week: Aldi chicken tenders. They are very tasty and Princess approved. Also, not too many calories per tender. A great find ’cause they’re not that pricey. Whoop!

Monday: Date Night – not sure what we’re doing, but I ain’t cooking!

Tuesday: Leftovers – we’ve still got stuff in the fridge from last week to eat.

Wednesday: Marinated Pork Chops (from freezer), frozen veggies, brown rice

Thursday: Leftovers – I’m telling you – there’s lots in that there fridge

Friday: Chicken Ranch Pizza (from freezer)

Saturday: Hot Dogs, fruit, veggies

Sunday: Asian Pork Loin (freezer – $5 Dinners Cookbook), salad, rolls

Not a very exciting week, but that’s the plan. So thankful to have stuff in the freezer. All I have to buy this week is produce and milk! Whoop!!

Menu Plan Monday 03.01.10

How is it possibly March already?  Seriously DO NOT know how that is possible.

LAST WEEK’S UPDATE:

Tried two new to me recipes last week. I made the PORK DUMPLINGS on Saturday. They were SO GOOD that they got their own post on this here blog. AMAZINGLY GOOD!!! However, not for those looking for a quick meal.

Sunday afternoon I made Ina’s GARLIC ROAST CHICKEN WITH VEGETABLES. It smelled INCREDIBLE while it was cooking. I somehow timed it so that it was ready just after the big hockey game. Perfect! I chose not to make the CLOUD BISCUITS I was originally planning to make with the chicken since I have joined the LOSING IT! Challenge. They would have been just too tempting, and the only one who really needs carbs in this family is the Princess!

THIS WEEK’S PLAN:

MONDAY: Small Group (Not Cooking – Whoop! Whoop!)

TUESDAY: Chocolate Chili (from freezer)

WEDNESDAY: Beef Sandwiches (beef from freezer), green beans

THURSDAY: Chicken Burritos (use chicken, rice, and black beans from freezer)

FRIDAY: Leftovers

SATURDAY: Sub sandwiches – hubby pick up

SUNDAY: Taco Soup (from freezer)

You will notice I’m using a lot from the freezer this week. Well, isn’t that the point of putting it in the freezer? To use it later? Tee hee hee. Actually, the reason is that I’m going to do the ONCE A MONTH MOM COOK OFF. Yep, I’m gonna do it. Next Saturday. Which means that I need some freezer space! Why am I doing it? The biggest reason I’m doing it – I need a food processor. Seriously need one. And, that’s the grand prize. So, I’m going for it. Even if I don’t win, I’ll have a freezer full of food to use and give away. So, be looking for more posts on that this week.

Menu Plan Monday: 02.22.10

Last week’s menu plan got all MESSED UP! We ended up with SO MANY leftovers from the week before and then ended up on an impromptu date on Thursday so I hardly had to cook at all. NOT that I’m complaining in the least.

So Sunday night we ended up having the planned Chicken and Black Bean Quesadillas from Tuesday night. OH MY! They were SO GOOD! I highly recommend this recipe. I took Amy’s advice and cooked my own black beans by soaking them all day and then cooking them for several hours on the stove.

I had never cooked dried beans before. Ummmm… they SERIOUSLY EXPAND as they soak and cook. If you’ve never cooked dried beans and plan to, USE A LARGER POT than you think you need so you are not having to transfer them in the middle of the cooking process because they are cooking over. Just a bit of advice there.

MONDAY: Small Group (not cooking – WHOOP!)

TUESDAY: (Soccer Practice) Hot Dogs, veggies, chips

WEDNESDAY: Girl’s Night (WHOOP!) Leftovers for those at home

THURSDAY: Garlic Roast Chicken with Vegetables, Cloud Biscuits (from last week)

FRIDAY: Bingo Night at School – Pizza!

SATURDAY: Pork Dumplings (Gonna try something new – wish me luck!)

SUNDAY: Breakfast for dinner.
