We don’t have any major activities this week (at least during the week). When I told the Princess, her jaw dropped. This hasn’t happened in quite some time. There are no rehearsals. No practices. We’re really not sure what we’re going to do with ourselves. Guess I can cook dinner this week! We have a TON of meat in the freezer thanks to a Plum District on Omaha Steaks and the chicken from Zaycon Foods.
Monday: Small Group (We might have a snack before. Princess will have chicken nuggets.)
Tuesday: Steak, potatoes, broccoli
Wednesday: 5 Layer Chicken Enchiladas, sliced veggies

Thursday: Pork Chops, Rice, Green Beans
Friday: Leftovers
Saturday: Cast party
Sunday: Chicken and Rice casserole from the freezer, salad

I didn’t forget so much as have so much I want to say and haven’t had time to get the words down! It’s coming!!!
Will u post the enchilada recipe please?
There is a link under the picture. Click on that and it takes you right to the recipe at Stolen Moments Cooking.
That link is so cool – I MUST learn the pinterest thing.
Love the enchilada recipe. I am soaking and cooking black beans tomorrow. You didn’t do anything special when you froze them, did you?
yawn… can I be lazy and just eat at your house every night? The commute would be a bit long, but it appears totally worth it. 😉
